Ever since the "Vita-Bunny" incident, I haven't been able to stomach rabbit - AT ALL. And since I know I'm gonna hear "What's Vita-Bunny?"... Back around 1975 or so, my parents bit on one of those back-of-the-magazine ads - In this case, the spiel boiled down to "how to reaise rabbits in your back yard for fun and profit". After sending in the requisite cash, they got back a handful of pamphlets (which, in hindsight, they probably could have gotten for free - assuming they had known where to look) with designs for rabbit hutches, care and feeding of meat rabbits, info on various breeds of rabbit, "so your rabbit is pregnant..." birthing guides, and on and on and on - you get the idea, I'm sure. After some twiddling with this, fiddling with that, and tweaking the other, dad put up a couple dozen rabbit boxes, and put in an order through the local co-op for enough young rabbits to fill 'em, officially putting us in the rabbit-ranching business. Now for the money to start rolling in... Things went about as well as can be expected - bags of rabbit-chow came in, bunnies went out the door - some ready-to-cook, some "on the hoof". We ate rabbit a couple-three times a week - not bad, but it was never destined to be my preferred grub. Some money came in from the project, but only rarely enough to cover the cost of feeding the critters, never mind the grunt-work involved in cleaning up after them, treating various rabbit "plagues" that came along without warning, time and materials for building new boxes for the expanding population, and of course the butchering and cleaning process. Finally the day came when dad ran the figures, mom ran 'em again and came up with basically the same result, and the decision was made: We're getting out of the bunny-biz. By the time things were finished, more than a thousand rabbits (From a starting batch of about 3 dozen) were killed, skinned, cleaned, wrapped and frozen. We ate more rabbit, more often. Rabbit stewed, rabbit baked, rabbit fried (It don't taste like chicken, no matter what you try to do!) rabbit soup, hassenpfeffer, rabbit-on-a-stick, rabbit until hell freezes over and fergawdsake let that day come soon 'cause were all sick and tired to death of rabbit and there's still at least 750 of the damned things in the chest freezer AUUUUGGGGGHH!!!!! Just about this time, the local supermarket came out with "Vita-burger", some sort of vitamin-fortified hamburger-like product that enjoyed a brief popularity. As you may have noted, I *DIDN'T* say it was hamburger - it was "hamburger-like" - in approximately the same way that "cheez-wiz" is a "cheese-like" product. I never did know for sure, but I *VERY* strongly suspect that there was a large percentage of what would nowdays be labeled "textured soy protein" in its heritage. It wasn't great, but it wasn't totally inedible, it made reasonably decent burgers and meatloaf, and it was actually pretty cheap. Then dad came up with a bright idea for how to get through the umpty-hundred rabbits in the freezer. (At that time, we were in a financial situation that made the idea of dumping food, however unpalatable, an absolute non-starter. We were gonna eat those damned rabbits even if we choked to death in the process, and that's that, and if you don't like it, you can go to bed without supper, young man!) We're gonna thaw out some of those bunnies, bone 'em out, and put 'em through the sausage grinder. We'll eat bunny-burgers! So, we ground up a buttload of rabbits. Now instead of having a freezer with something like 750 frozen rabbits in it, we had a freezer with about 200 rabbits, and somewhere in the neighborhood of 250 pounds of ground rabbit in it. And about 10 pounds in a tupperware bowl in the fridge. Time to do up the first batch of "bunny-burgers". It was right about then we discovered a truth about rabbit that we'd all known all along, but never actually thought about too much (mental self-defense, perhaps?) - Rabbit is *VERY* lean. And found out the hard way that unless served essentially raw (which none of us could stomach after one trial) the resulting burgers were so horribly, chokingly dry they were all but inedible, regardless of what you tried to top 'em with. When I say "dry", I mean that the Sahara desert could take lessons on aridity from 'em. That's OK, sez mom - We can grind and mix in some of the fattier parts from the porker we just slaughtered. No good... It moistened the meat enough that it was at least possible to eat it without instantly dying of dehydration, but the flavor went from "Oh, gawd... rabbit again?" to "Oh gawd, this tastes so horrible I think I'm gonna puke!" - Rabbit and pork don't go well together. Take the word of someone who's had the misfortune to experience it! And learn from the mistake! For the first time in my memory, dinner was actually scraped unceremoniously into the garbage, and we went to the (at the time) brand new Pizza Hut that had opened in town a few weeks previously. OK, Lard/pork is out. Mayhap it'll be better if we mix it with beef? So that's what got tried... Dad dragged home a trial couple pounds of hamburger, ran it through the grinder 50/50 with some of the already ground rabbit, and it wasn't particularly bad! Not great, but a helluva lot better than the all-but-inedible pork/lard experiment. It was at least sorta like fit to eat, anyway. Meanwhile, the "Vita-burger" craze had pretty well run its course, and the local market that sold it had it on sale at a ridiculously low price. So dad gave 'em a call, and placed an order for a hundred pounds of the stuff. The store was thrilled - They could get rid of the last of their stock, actually make a few cents of profit on it, and be done with it. Hooray!! It's a win for everbody. Or so it seemed at the time... A hundred pounds or so of ground rabbit came out of the freezer, was thawed, and got stuffed into the grinder. The Vita-Burger got stuffed in on top. The crank was cranked, the output end spit the newly ground meat-like substance into freezer bags, the bags were duly closed, labeled and deposited in the freezer, and the last bag (about 3 pounds worth) went into the fridge for tomorrow night's dinner. Tomorrow came around, and the bag of "Vita-bunny", as Dad christened it, came out of the fridge and was "patty-ized". Some of the patties were cooked, various family members doctored up the buns the patties were destined to rest on in their preferred ways, and "The Great Vita-Buny Experiment" commenced. For a very short time - perhaps a minute, there was no sound beyond that of the family biting into their burgers. Looks were exchanged while we chewed, and nearly in unison, we all took another bite. It was about 15 seconds later that we spewed that bite in disgust - and nearly in unison... Dad looked at mom. Mom looked at dad. We kids looked back and forth amongst each other, Dad nodded, mom did too, and the magic words "We're all going to Pizza Hut again" were uttered. It was unanimous - "Vita-bunny" wasn't fit for human consumption. The next day, Dad gave in to the inevitable - The freezer was emptied - whole rabbits, rabbit parts, vita-bunny - it ALL went in the back of the truck, and was driven to the local dog pound. The inmates were thrilled with the whole rabbits and rabbit parts. And absolutely refused to touch the Vita-Bunny!
