I think your problem is not a gnuplot problem. Every time you import a 
graphik (gnuplot output) into "Word" you import it as a picture. If you 
want to have the real same font and fontsize in your text and the 
graphic, than you must switch to LaTeX and one of the "tex" or "latex" 
terminals.
