Many e-mail clients can be configured to show headers, and you can use
it to filter. You can also use procmail (or equivalent) to rewrite the
message to include it if you wanted to.

What would a solution look like for you? [Note that modifying the
subject and body of the message is problematic for many reasons
including PGP and DKIM, so that's not an approach that can be used.]
