I don't have access to a Linux desktop at the moment to workout the exact steps. But since you're already familiar with the CUPS Web Interface, it's just a matter of changing the "Connection" to AppSocket/JetDirect. So select the printer, then the "Administration" button, "Modify Printer" and choose the appropriate option. You should end up with a connection URL like: socket://<ip address>:9100.
