Could you try `dpkg-buildpackage --build-profiles=nodoc`?

At least I can't find a way to run this command.
Whenever I pass DEB_BUILD_PROFILES=nodoc to sbuild, or --profiles=nodoc,
the actual dpkg-buildpackage command becomes:

dpkg-buildpackage --sanitize-env -Pnodoc -us -uc -G -rfakeroot
