Because there's a lot of data you might want that's removed with the styles.
For example, bold and italic, justification, headings, etc. You don't need
the definitions of these things necessarily but if you want to convert the
document to a sensible text document rather than just a block of plain text
then they're very useful..

Removing the styles header is pretty trivial anyway.
