Energy Saver seems to be quite buggy in many versions of OS X. There
are various reports of issues with it. I'm almost sure it's what causes
my display to go to sleep for no reason under OS X 10.2 (despite all of
the Energy Saver options being turned off / set to "never").

You can try deleting the Energy Saver preferences, but it's unlikely to
help for long, if at all.
