Well I have success now.

Instead of trying to create a "Launcher" for Mint I simply put the script
into the "Desktop" directory where it shows up as an icon.

Then simply clicking on it allows it to run as I expected.
It does ask if I want to just run it or run it in a terminal, but that's a
simple thing my wife will not have a problem with.
