Option-zero is basically a superscript letter O, which can look a bit fancy in some fonts, for example thicker on the sides and thinner on the top and bottom. The shift-option-8 degrees symbol is simply a plain circle in every font (or at least those it is defined in). The difference can easily be seen by using a font size like 120pt in a serif font such as Palatino.
