People also come to conclusions about particular things they hold true, to various degrees of certainty, and they various methods to arrive at them. These methods are all different, though there can be some light overlap, and different people use these methods with different mixes, which is why people end up believing different things. What science is, is not determined by its subject matter, but by its method of investigation, commonly called the scientific method. That is, if you're thinking about atoms, but in a metaphysical way or a mystical way or in some artistic way, then it's not science, even though you're thinking about atoms. Science has a particular way of investigating whether something is true or not.
