I think the really exciting idea from the squence of pictures, is to see the increasing curvature weakening the surface tension untill the droplets fall between the surface structures by force of gravity.

I don't know if I agree with this interpretation. I'm thinking that as the drops get smaller the ratio of surface to volume increases (and, therefore, the ratio of surface tension to mass increase). So, the smaller a droplet gets the more its surface tension is--literally--activated. I'm wondering if maybe the flatness of the smaller droplets may be due to having a higher ratio of surface tension as the more highly activated surface is attracted to negative forces on the surface. (he dosent know math at all) McGinn says the water is going "plazma", like old women in the 1890's would get the Vapors.

I'm just saying smaller droplets will have a higher ratio of surface to volume (and, as such, will therefore have a higher ratio of surface tension to volume). And, this might explain the difference in the profile of the droplets, as indicated in the pictures. (But this is just a conjecture. I haven't studied this thoroughly.)
