This is generally assumed. But it has never been demonstrated empirically. Actually, it is just something meteorologists have always assumed--for no particular reason other than that everybody has always assumed it. IOW, it's sheep following sheep. Don't be a sheep. So your notion of "no gas phase" H2O and going directly to droplets couldn't even convince a caveman ( at lest not for vary long). It's not my notion. It's what is indisputably indicated in all of the evidence we have. 100% of the laboratory evidence indicates that water boils at temperatures higher than are available in our atmosphere. Pilots are right about what they experience but wrong about the reason why moisture in air reduces lift. Anecdote is misleading. There is a reason why moisture in air reduces lift, but its got nothing to do with density (which is higher than that of dry air), it has to do with liquid water's tendency to absorb heat/energy (lookup high heat capacity of water). Liquid H2O has a huge heat capacity (the mechanism for which is the pendulemic activity that I describe in my "Breakthrough" paper). Steam (gaseous H2O) has a very small heat capacity. This distinction is what makes steam so useful in steam engines. As you heat water it absorbs energy all the way up to it's boiling point and then, after it becomes steam, it releases the stored energy immediately and aggressively. And so at BP (boiling point) minus 1 degree it is still absorbing heat. At BP plus 1 degree it is trying to shed its energy. And it is this shedding energy in huge amounts (as long as it stays steam) that powers the engine. (Another factor that plays into all of the above is that H2O has a huge heat conductivity. In conjunction with its, above mentioned, huge heat capacity, its huge heat conductivity is instrumental in how H2O "flashes" into being steam--with all water molecules in a container converting to steam in an instant.)

Most people when they don't understand immediately find themselves overwhelmed with cognitive dissonance and this causes them to become frustrated, angry. You are different. You ask the right questions. Most liquids don't have a high heat capacity. Water has a high heat capacity because there is a mechanism that conserves (stores) energy. And that mechanism exists BETWEEN H2O molecules, as fully explicated in my "Breakthrough" paper. For most liquids the force that holds one molecule against another is a standard linear force, the closer they come together the greater the force that keeps them together. With H2O the force that brings them together becomes neutralized as they come together. Thus H2O molecules never act in a compound manner to reflect energy because the force that brought them together is neutralized by having come together. Thus H2O molecules bounce off each other. And, strangely, as they pull apart from each other the force returns, pulling it back again. The ensuing pendulemic Relationship that exists between two H2O molecules is the mechanism that stores energy. And this is why H2O has a high heat capacity. The mistake modern science makes with H2O is to assume that the force associated with H2O polarity is a linear force, and it's not. In a sense a Hydrogen bond between H2O molecules in liquid water is not really a bond at all in that as soon as the bond is completed (one H atom on one H2O molecule touching the Oxygen atom of an adjacent H2O molecule) the force that caused them to come together disappears and returns only after they move away again. All of this is explained in my "Breakthrough" paper. I know it's a tough read. But once you understand it you will understand something extremely profound about water. More importantly you will have the basis for understanding why and how collective tensional forces in H2O actually increase with shear. (In almost all other substances tensional forces decrease with shear.) You have to think very carefully about what is happening on the molecular level. You aren't there yet. But you are asking the right questions. And that is a big deal. Modern science still hasn't figure out that H2O polarity is a force that is inversely related with proximity.
