SOME galaxies are discs. Others are elliptical or irregular.

Saturn is an example of a planet with a central oblate spheroid mass 
distribution and a disc mass distribution. A lot like what gives rise to 
the shape of spiral galaxies.

A coin only becomes a sphere when its rotation is faster than your eye 
can resolve. Pretty sure that elliptical galaxies are not discs rotating 
faster than the eye can resolve.
