That's exactly how it was explained to me back in high school microbiology class, circa 1970 or so. It's not new news. Modern "flash pasteurization" heats milk to a temperature sufficient to kill almost all of the potentially-disease-causing bacteria (e.g. E.coli and such), and almost all of the lactic-acid-producing fermenters which would cause milk to go sour after a few days. It's not hot enough to kill _all_ of the bacteria, though. There are some varieties of bacteria, naturally present in most cow's milk, which are more heat-resistant, slower-growing, and don't produce lactic acid as a metabolic byproduct. Give pasteurized milk enough time, and it will "go bad" (or "spoil") with a distinctly foul flavor and smell... that's due to the growth of these pasteurization- resistant bacteria. I have no reason to believe that viruses (bacteriophages or otherwise) are involved. If you want, you could test pasteurized milk for the presence (or absence) of active bacteriophages, by simply adding a trace amount of a lactic-acid-producing fermenter... say, a small amount of live yoghurt. Do this, let the room sit at room temperature for a day, and you'll have plenty of sour - the milk will become something akin to yoghurt or kefir. People do this all the time... it is, in fact, the standard way of home-making yoghurt! It's possible to buy "ultra-pasteurized" milk, which has been heated up to a higher temperature, sufficient to kill all of the bacteria. If sealed in air-tight packages (as is typically done) this ultra-pasteurized milk can be kept on the shelf, at room temperature, without spoiling. I looked up "bacteriophage milk" through the usual Web search mechanisms. Almost the first article I found, was an overview of techniques used to *prevent* bacteriophage infection of milk, during the production of yogurt and cheese. It appears that at least some popular strains of lactic-acid-forming bacteria in commercial use, have "prophages" in their genome... latent phage viruses, which can reactivate and cause phage outbreaks (and thus ruin the fermentation process) under certain conditions.
