There seems to be no plain ffmpeg in the jessie repos.

Perhaps I should just grab the upstream pkg ,directly and 
compile/install however necessary?

I have a .webmd file from which I'd like to extract audio and write it 
to an .ogg or .flac file, but I'm a little lost without my old friend 
.ffmpeg

Any suggestions will be appreciated.
I did the requisite googling, and all I find for what I want to do are 
instructions for how to do it in Ubuntu with ffmpeg.

That's right. Ffmpeg in jessie is spelt "avconv" [1], which is a fork
of ffmpeg (more or less compatible). Reportedly, there's a genuine ffpmeg
in jessie-backports. It's a somewhat complicated story (the fork
itself and the decision on which one to package by default for
Debian, which went back and forth [2]).

Ffmpeg came back in later distros (sid).

Quite probably avconv will do. If not, I'd try the jessie-backports
ffmpeg before resorting to self-compiling.

Don't install any ubuntu package, you'll get problems. Ubuntu is Ubuntu, 
not Debian...
A good Debian multimedia repository I use for over twelve years is 
Christian Marillat repository here:

I've used debian-multimedia in the past without any trouble, in both 
squeeze and wheezy.
I would NEVER try to install some Ubuntu crap.
I got ffmpeg from backports and installed it.

Yes, in the past, Marillat repository name *was* 'debian-multimedia', 
then he changed his site in 'deb-multimedia'.
*Now*, 'debian-multimedia' has nothing to do with Debian, it's a fake.

Yes but, in the past, some multimedia packages were not available in 
official deb repo. Recently, good news: I discovered many of these 
multimedia packages are now in Debian sid/testing repos. So I dont use 
any more 'deb-multimedia' repo.
Avidemux is not available in Debian but official Avidemux appimage works 
fine http://fixounet.free.fr/avidemux/download.html
