I had already found the "Maximize Compatibility" toggle, and used it.
Most of my devices use only 2.5GHz, so I already had it on.

Apparently the iPhone doesn't (or can't) provide both 2.5GHz and 5GHz
at the same time. That strikes me as odd.

Anyway, switching between the two bands did not help.
