It doesn't look like bcachefs is in state where it's stable/mature
enough for it to be shipped in a stable release and enabling it in the
Debian kernel was probably a mistake (especially given the current
situation upstream).

I would thus ask you to disable BCACHEFS_FS.

Yes I was aware of these unfortunate happenings. It might be indeed a
good idea will prepare a MR for team discussion (if already
propagating down to 6.12.y as well).
