I check that respective UUID or LABEL exist and are correct. In the first part of the boot, U-Boot boots using the same UUID without problems, but later Linux doesn't find it. Using busybox, "blkid" and "fdisk -l" do not show any results, "ls /dev" shows no "sda" nor "mmcblk" in /dev/.

The driver responsible to provide the mmc block device is sunxi-mmc.
According to
https://packages.debian.org/bookworm-backports/armhf/linux-image-6.12.95+deb12-armmp/filelist
this driver is available in the backports kernel. Can you verify it is
included also in your initramfs image (e.g. using lsinitramfs(1) or
lsinitrd(1))?

Best regards
Uwe
