Is selecting them all and choosing File > Rename not working for some
reason?

Not bash, but I use Perl's "rename" command all the time:

rename -n 's/.doc/.docx/' *.doc

Ahh ! Miracle ! yes, that works. Allows me to change text in the
selected file names. (so I can change .doc to .docx).

Thanks.

Didn't realise that File->Rename gave that flexibility.

> Ummm.... File > Get Info > Open With > Change All, anyone?

Wouldn't change since the file extenstion already points to the right
applications. It is the Apple applications that refuse to open .doc
whose content is the modern version (akd the xml stuff).

You mean "didn't bother doing any research into this at all", don't you?

It'd be pretty unrealistic to expect changing the filename extension
will change the file content. If the contents are XML, the correct
filename extension is "docx". Applications that can read traditional
Word documents with the "doc" extension can't be forced to read the
newer XML format "docx" files simply by changing the filename extension.
Applications must be written to support the newer XML format. And
several of Apple's applications do indeed support the newer XML format:
I just tried it and Pages does indeed open documents with the newer XML
format. Quicklook can display them on my Mac Pro running macOS 10.13.
Preview and TextEdit can open them too. iOS also has support for reading
the newer XML format So you should be able to easily set File > Get Info

.doc and .docx are different file formats. Renaming the files will
almost certainly cause problems, including data corruption of data loss.

people have inspired whole countries to great deeds because of the power
of their vision. And so could he. Not because he dreams about marching
hordes, or world domination, or an empire of a thousand years. Just
because he thinks that everyone's really decent underneath and would get
along just fine if only they made an effort, and he believes that
strongly it burns like a flame that is bigger than he is.

No. Changing the extension will not cause data corruption or data loss.

Microsoft Word doesn't care what the extension is when it reads the
file's data.

Simply changing the file extension won't achieve anything ... the data
inside will still be in .doc format, which is completely different to
.docx.

If you really want to change them to be .docx files, you'll need to use
an app to convert the actual file format. MS Word will of course do
that one-by-one manually, although you might be able to use AppleScript
/ Automator to run through a whole folder. There's probably other apps
out there to specifically convert the format.
