For some reason, almost all my sigs. in mail.app were blank this
morning.  The menu showed the name of a sig, but nothing appeared in
the message window.  When I tried to open mail's preferences, it
wouldn't open.

Quitting mail and reopening it solved the problem, though.

Sounds like you found a bug. And now you get to figure out if it's
reproducible... : D
