It seems that Apple won't say how to do this, but they allow users to
say it on their forums.
However, loads of users say "right-click on the app in the apps tab and
select delete from the menu." A few say "select and press the delete key"
But in the current iTunes and MANY version back, there is no menu and
both delete and Cmd X get the "Bonk" error sound.
I have paid and free versions of several apps, one app that is no longer
available (but app store wants me to update it!), a few that
are just clutter, etc.
Some of the above during sync complain they "can't be sync'd because the
app can't be found" even though the are not on the phone and not marked
for install.

Yeah, also I suspect the OP simply doesn't have the Apps section in the sidebar visible. As with other media, you delete from iTunes' library and then sync the change to your device. -- If you're not part of the solution, you're part of the precipitate.

First you select your IOS device.
Then you go to the Apps tab.
There you find a list of the apps you have acquired, an indicator of
whether or not they will be removed from or installed on the device in
the next sync, and images of the device screens that allow you to
rearrange the positioning. Any changes made here will appear on the
device after the next sync. An easier way to do it than on the device.
However, to delete from iTunes (instead of only from the device) you
have to go to a _different_ apps screen--the one that nospam posted.

Is this of any help?
How to delete content you've downloaded from the iTunes Store, App
Store, iBooks Store, or Mac App Store

No. Like I already said, Apple doesn't seem to think anyone might ever
have any reason to do it. That is one of the pages I already saw that
tells you how to remove it from the iPad.

My question was not should I do it but HOW do I do it. And nospam
answered it. I repeated the answer and you quoted the repeat.
In other words, to answer YOUR question, the capability is still there,
but it has been unnecessarily obfuscated.
