The best genealogy program, available for Mac and Windows is  "HEREDIS". 
It can, of course generate GEDCOM files.
I started using it about one year ago, with some family papers , to 
begin with , and I am now far in the middle of the seventeen's century, 
thanks to the fact that in France, where I live (being French), most of 
the civil and parochial registers are available on line for free.
