As for the modem port, check out examples like ADTPro and Apple Game Server. Putting this together with your other questions - it seems like you want to push out video via serial? You'll want to compress it pretty hard and get it back into a blittable form very quickly. 640 is probably not a realistic target, but with adequate tricks (minimal updating, smaller window, etc.) it is workable.
