I used the 'copy' button on the About box dialog, and then pasted the contents into BBEdit. (The same display is available by just calling SystemInformation[] in a notebook.)

You need to do some processing to make the ASCII file look pretty, though.

You can paste results of the copy into a Mathematica notebook, and then use copy as plain text to get an ASCII file with different formatting.

With a bit of work with editing (regular expressions is our friend), something useful should be not that hard.
