Why do I feel hungry after pooping?

There is a nerve network in the gut that has a high level of complexity and is responsible for some of the decision making about food and eating. There are waves of signaling called motile mobility complexes that run in a generally "down" direction (down being toward the anus) along the gut. When the rectum empties, a signal is passed back to the network that signals for the stomach to empty and for the food bolus to travel down into the intestines for processing. The brain is informed, effectively, that there is more "room" in the gut for food. Hunger is a complex phenomenon that isn't well understood, and this is a simplification, but it's a decent schematic understanding.
