I am not sure that you can set a pitch for anything on the clipboard.  
It is probably stored there as basic ASCII characters, and will
acquire the default pitch of any document you paste it into.  There
are applications that will send formatted text to the clipboard,
but if you paste the text back into a simple text editor, the
formatting is lost.
