Desktop computing means doing personal/professional work with a computer. Servers and so on (which Linux has a huge chunk) usually sit unaided and untouched by human intervention for weeks and months and more on end. They are certainly capable of desktop use - they just aren't used for such. The truth is, Linux is used for desktop operations by fewer than 1 out of 50 people.
