For the wife's Aricept, I am using "Clock 1.0" and setting an alarm.

It allows days to be specified - although I've got the entire week
selected.   So far, so good....

That's single med? My situation is a bit more complex.

Also, the Aricept entry now appears in my Calendar as a repeating event
- so I guess the Clock app is moot - just go right to the calendar and
enter multiple repeating events.

The OP has said that ToDo and Calendar Apps are not satisfactory
although he did not explain why. I assumed it was because the App
requires some input from him. For example, I would like a reminder to
take a pill with my evening meal but short of using some extremely
intelligent tracking with the GPS I don't see how the App would know
when I was eating.

Can you see any benefit from the Aricept?  I've had two relatives who 
took it and I couldn't see any difference.  In one case, the patient got 
muscle tremors from the drug (it prolongs brain synapse activity, 
causing higher muscle stimulation as a side effect), but I couldn't tell 
that there was any cognitive improvement.

I cannot - but I am there 24-7, so changes may be lost on me.

Both the daughters (who visit maybe once every 2-3 weeks) say there is a
noticeable improvement.
