$ grep sendmail_path /etc/php/7.4/cli/php.ini
;sendmail_path =

it looks like it's not set, though...

$ php -r "echo ini_get('sendmail_path');"
/usr/sbin/sendmail -t -i

is set.

Strange...

It's the default value, php will try to get it right with the path, in 
case it fails, you have the option to set a path if needed.

This means - it is not set to anything else as the default.

No, just the expected result. This setting has a default value, which
can be overwritten in php.iini. Also see here:
<https://www.php.net/manual/en/mail.configuration.php#ini.sendmail-path>

"sendmail_path string

Where the sendmail program can be found, usually /usr/sbin/sendmail or
/usr/lib/sendmail. configure does an honest attempt of locating this one
for you and set a default, but if it fails, you can set it here."
