(Untested, not even really investigated): Can you configure
the javadoc utility to generate the SE docs from the Java source?
I believe it can handle various kinds of externally-supplied style
sheets and stuff; maybe there's a way to get it to spit everything
out on one giant HTML page. You could then use LibreOffice (for
example) to generate PDF.
(Also untested, only marginally less speculative): You could
write a sort of "Web spider" that would traverse a JavaDoc tree
or the Tutorial, digesting HTML pages and spitting out one giant
Open Document (.odt) file. Tools like ODFDOM should be helpful;
there's also jOpenDocument (although I find its documentation a
bit sparse), or using a UNO bridge to an active LibreOffice/
OpenOffice.org instance.
