I don't know what exactly you have in mind, but the simplest way IMHO would be to write the multiplots to a single PDF the way it should finally look like. Once the first PDF trial is generated, you could just load it into Preview which should automatically reload the PDF once changed. Otherwise, thy the free PDF viewer Skim, which can do so for sure.
