Three layouts, one used rarely, but when the database is opened via 
Filemaker server, that one always comes up first. OIs there a setting 
somewhere for which layout defaults?

By default, it is the last one you were looking at before you closed the 
file on your local machine and moved it over to the server.

 From the File > File Options menu, you can set which layout to switch 
to upon opening.

If you need the database to do something as well as switch Layouts
(e.g. sort the records, find "today's" records, etc.), you can create
an Opening Script, also set in the File Options / Preferences to be run
when opening the database, which includes the Go To Layout command.

If you get a "FM" in the first place - these days very few products do.

I just had to buy a new printer and it came with a couple of sheets of
paper with brief install instructions in various languages and nothing
else. My old printer came with an actual paperback manual about 200
pages long, all in English, which told you EVERYTHING.

That 200 page manual probably cost more to print than the new printer you bought cost to manufacture.

I wouldn't be at all surprised judging by the build-quality of this new
printer compared to my prevous one (which lasted 15 years), but this
printer is the very last one on sale that can run on Mac OS X 10.5
which is on the laptop and only has to last until I properly upgrade
the whole system.

Most users never read manuals. For the few who do, PDF or HTML files are
available in most of the cases.
