  Actually most keep a local level which means they keep
track of local up. Which means they are not tracking the stars.
I use to write the code to keep them stable for the local
levels in aircraft.

 However the Einstein Gravity B probe was designed to
point the same orientation in space to measure relativity
effects. But that is not an airplane.

 And what does your thread have to do with compression?
