Making a "server edition" that ships with a DE, however light, is such a small usecase, we might as well call it zero. Also, theres nothing stopping you from using a remote X Server, such as your workstation. IIRC, you need to enable X Forwarding in /etc/sshd.conf ... but once you do (and restart sshd), you should be good.
