I occasionally saw that type of miilk. Sometimes, the cream was
so thick, one could turn the bottle (gently) upside-down, and the
cream would hold the milk in.

Silver was the normal full fat which would tend to separate into a cream layer and the rest, blue was low fat and gold was wonderful high fat stuff. A local dairy used milk bottles into the mid '70s. They didn't deliver though, they had what would now be called convenience stores all over the area. A different dairy delivered, but not in bottles, until the early '70s IIRC. A bit farther up the thread someone mentioned cream separating out at the top of the bottle. My mother told me that when she was a child, the bottles had a large bulge at the top and then narrowed again. The milk evidently wasn't homogenized and the cream separated out. You could either pour it off and use it, or people used to mix it in before pouring the milk. She also said she remembered how sometimes in the winter the milk would freeze and you'd get a column of milk sticking out of the top with the paper cap sitting on top of it. :)

There was a metal-skinned beaverboard box on the porch (with the dairy name embossed) that the milkman left the milk in, which provided a little protection. But if you forgot to take the milk out in the morning (or if it was really cold, e.g. below zero F) you'd get the column of cream with the cap sitting on top. (IIRC our bottles didn't have a bulge for cream at the top, though.) This would have been in the 1940s, 50s, maybe early 60s. I don't remember if they still delivered after milk went to carton packaging. It annoyed my mom when everything went homogenized, as she was used to skimming the cream off for her coffee.

Still has cream on top - amount depnding on what the cows are eating and the calving season. Much fattier milk than supermarket stuff which is watered to a consistant fat level. WHen cows calve, their first milk is full of things good for the calf, including stuff that helps it with its `movement' That milk used to be used to feed the calf for the first few days, and was not to be sold to the public. A nurse in a obscure hospital told me that they could know when their milk suppliers cows were calving, the patients would get `very loose'. Before 1900 or so, cows were keept in the innercity, feed drawn from the country, solid and liquid were sold to local gardeners. Then the railways got into the system, `milk trains', first thing in the morning. Then we had delivery men, milk rounds worth real money, now they are aswell. -- greymaus . . ... I've also encountered the problem where there is no regular milk on the shelves. One time I bought regualr milk and it had been doctored with Cremora. Cremora jells when nuked. /BAH

Depending on the mission at hand, today I buy either UHT shelf-stable milk (to always have on hand for cooking), or raw milk from the man who brings it into the village on a donkey cart (When I lived in town in Tonala, a man on horseback brought raw milk up and down the streets every evening). [Raw milk is necessary for authentic French Milk Icing, because the pasteurization process destroys some of the natural enzymes - and yes, it is a risk, but it is a risk I am willing to take as a healthy adult]. When I go on an ice-cream producing binge, I buy unadulterated cream from the dairy co-op two towns over. (No gelatin, no carageenin, no polysiloxate).

Holstein cows are milk-producing machines, lots of milk, lower quality. You can fiddle with the constituants mechanically after it leaves the cow, but its not the same. Cows in the US are treated to produce more milk, with the result that many countries ban the import of US milk products. There are people now who want to drink milk as it comes from the cow, without it been Pasteurized. I think they are crazy, that treatment when introduced was one of the first steps in social medicine, and along with drains, and clean water, means that a lot of very nasty conditions are rare now -- greymaus iD|marrA Raa|fLa Ireland
