There is certainly some political correctness going on, but conservatives grossly exaggerate the extent. A lot of P/C exists within already very liberal groups; for instance, the party line within them is to blame all social problems on external factors, such as racism, never on internal problems or personal failures.

Suddenly, as parents of teenagers they became against all the wild stuff they did as teens, and became rather conservative overall. Also, much of the country got tired of all the lefties and the laws and policies they initiated, which led to a backlash and the election of Reagan. Since then, the country has continually moved rightward. Obama's policies would be rejected by Democrats in the 1960s as far too conservative, and Cruz/Rubio would've been as the John Birch Society back in the 1960s.
