I have recently reinstalled Thunderbird to my Samsung android phone. I 
cannot see how to set one of my three accounts as the default for 
sending emails.
I did Google it, but the settings it talked about are not there on my 
phone.

click on the hamburger, then settings, all your accounts should be 
listed, use the double horizontal lines to drag the accounts up and 
down, the top one is used by default ...
