Are you composing in plain text, or in HTML?

Tools/Options/Composition/General/HTML, Text Color

Are you using a CSS file to /override/ settings in Thunderbird? The
following discusses using userContent.css to specify quoting colors:

https://www.reddit.com/r/Thunderbird/comments/ejg9h0/is_it_possible_to_use_css_to_change_quote_colours/

No, not text? Or, No, not HTML (text with tags)? Which? You have to
use some scheme to write a message.

The conversation discusses how you can use the .css file to add coloring
like you want. Since it doesn't seem a feature of Tbird, you'll have to
decide whether to go the CSS file route, use an add-on, or forego
colorization to highlight indentation levels.

No matter what colors you specify, the colors seen by the recipient of
the E-mail depends on the recipient's application and settings. This is
true even if you compose HTML-formatted and specify colors in the HTML
markup.

Very true. You cannot force them to see how you formatted your message,
but maybe it'll look your way. If they view as plain text, they will
see NONE of your formatting, and you can't force them to view as HTML.

Maybe croy is more interested in easily identifying quoting levels
within a reply. My NNTP client applies color coding to indentation
levels: a different color per indentation level. Actually I would
prefer a separate pane on the left of the message pane showing a tree
skeleton of quoting levels, especially for long threads, especially for
users that quote EVERYTHING through all subthread levels instead of
trimming to provide context just for their reply.

There are addons that can help with highlighting quoting levels, like:

https://addons.thunderbird.net/en-US/thunderbird/addon/quotecolors/?src=search

Interesting (and thanks), but I'd rather not go thru the addon boogie, with
Thunderbird breaking them as fast as folks can write them.

In settings change "mail.citation_color" to something else such as: #ff0000

You can find hex code for colors online.

But for short, they're red, green, blue brightness across the six hex
digits (so #FF0000 is FF 00 00 - full red, no green, no blue, i. e. it's
red). Many things with a colour selector (I use IrfanView for most
things to do with images) will let you slide around a colour area and
show you the number.

FEH! Why do updates have to make annoying random changes? I was hoping

You grumble too much.

Why not do a web search on 'quote colors' and 'Thunderbird'?

You might be surprised what is offered.
