Try right clicking on the sender and left clicking "Create Filter 
From...".  It's not single click, but it should simplify / shorten the 
process.

That only works in an opened message. Since I don't normally open 
messages, it's three clicks for me.

In Tools, Message Filters,  New.

You are present a screen to buid filters.
Fill in the information requested.
I always set it so it to run Manually and Getting New Mail< "Filter 
before Junk Classification"

I also Click "Match All Messages"  This is important as if not click the 
filter may not work as expected.

Fill in the information rerquested in both boxes.

Tools, Message Filters  You can select the folder on which to run the 
filter.

It is easy enough, UNLESS the author of the messages you are trying to 
filter has been creative, and have done thing to get around the filter. 
If this is the case you may find messages on this newsgroups on what to 
do to catch them.

Yes, that's the way I do it. I was responding to Grant's suggested way 
of doing it.
