I know in newsgroups, I can repair folder and it will force a redownload, 
but that doesn't work with RSS feeds. :(

many RSS feeds seem to only keep the last few entries on the server, 
wouldn't this be impossible?

Back up whatever is in the folder. Re-subscribe to the feed. Restore
anything that's missing from your folder back-up, or from your normal
system back-ups (that we all make regularly, right?). That's about the
best you can do as Yuchan says.
