I saw the group is pretty empty, so I am trying to get some discussion going: What is, for you, the best way to make good coffee? How do you like yours? I see a lot of people who really like espresso for example, but it's rarely that I manage to taste an espresso that actually is worth drinking.

My first cup in the morning is a pour-over, usually Peet's coffee with a
paper filter.
My following cups are espresso drinks. I bought a bean-to-cup espresso
maker, I can get a single, double, or lungo shot with one button push.
It's probably 75% of what I'd get with a more serious espresso maker.
Oddly, brewed coffee will keep me up at night, but espresso doesn't do
that nearly as much.
Usually I make my wife a no-foam latte for the road mid-morning, then
make myself a double macchiato with the leftover foam. Can't have good
foam go to waste!

Moka pots are a great cheap way to get both of those things.
