Es gibt jede Menge Entwicklungsboards. Es gibt Boards von 
Bauteileherstellern oder von Firmen wie Olimex und es gibt Projekte wie 
Arduino oder Raspi. Wobei Raspi für sowas nicht so geeignet ist.

Ich habe weiter oben ja schon ein Bluepill Board mit STM32 
vorgeschlagen. Ich verwende die für einfach Sachen. Programmiert wird 
das mit Cube-IDE in C. Es gibt auch jede Menge Beispielcode im Netz.

Von STM gibt es die Discovery-Boards in verschiedensten Ausführungen, 
auch welche mit Display.

Dann gibt es noch Spezialboards wie das Red Pitaya. Das ist speziell für 
digitale Signalverarbeitung gedacht und hat 14 Bit AD und DA Wandler.

Eine passende Hardware zu finden sollte wirklich nicht das Problem sein. 
Aber man muss sich dann in die Software einarbeiten und das ist 
sicherlich nicht ganz ohne.
