STM32 ist gar keine schlechte Wahl. Es gibt da z.B. das Bluepill-Board.
Abtastrate ist deutlich höher als 5 kHz. Damit könnte man sich dann noch 
ein paar Bits dazulügen.

DAC hat der nicht, aber PWM mit 16 Bit Auflösung.
