U.U. reicht schon ein ADC/DAC für SPI oder I2C. Die gibt es oft auch
noch im DIP-Gehäuse oder SO mit 50 mil.
Ich würde mal als Board mit dem RP2040 anfangen. Das ist mit knapp
5 EUR recht preiswert und der Controller lässt sich einfach in 
Micropython programmieren. Der eingebaute ADC ist allerdings nicht
der beste, aber zum Ausprobieren taugt er allemal. Die Hardware PWM
Einheiten sollten für den Einsatz als DAC genügend schnell sein.
