Sorry, can't recommend anything specific. But you may already
have some device(s) in mind you'd like to play around with.
In that case I'd simply go to the manufacturers web site and
try to find if they distribute low-level documentation. If
you don't get it there I'd guess it's going to be rather
hard to find them elsewhere (and if you find something it
could be legally problematic since it might be a copy of the
documentation that got leaked despite an NDA).
