One advantage of separate salt would be that the salt is hygroscopic so makes the chips age faster once the bag is open. But stashing them in a ziploc fixes that, or just eating all of them at once. I wonder if the chips are packaged in nitrogen or something to keep them fresher.

Not in my lifetime. https://originalsaratogachips.com/our-story/ I grew up in the vicinity of Saratoga and the chips were a local brand. https://www.mashed.com/382501/the-untold-truth-of-wise-potato-chips/ Wise has a similar story. In the '50s Wise was preferred to Sartoga Chips. The Saratoga brand often had green spots or were of irregular thickness. Either were salty right out of the bag. https://www.ontariopotatoes.ca/how-chips-are-made That one credits the Saratoga story and says the salt is added after they come out of the vat. They're greasy enough to retain the salt.

If they just put the salt in the packet it would all fall to the bottom until they found a way to make it stick to the crisps. Then they started to put other flavoured coatings like cheese and onion. About the same time they changed from bags made of greaseproof paper to plastic, and we had to learn how to open them (by pulling them apart or popping them) as you couldn't tear them open like the greaseproof paper ones. I think the "salt and shake" ones with the separate blue bag of salt can in a few years later. I don't know why they chose to do that, but they definitely taste different - and, to me, better - from the ready salted. -- Max Demian

If you're used to simply tearing the greaseproof paper bag open, you have to work out how to open the plastic ones; either pull apart or compress and pop. All new experiences have to be learnt, either by watching what other people do or experiment. For example, it took me some time to work out how to open kitchen tongs of this sort: https://groceries.asda.com/product/food-to-order-2/george-home-tongs/1000229763144 You bash the top down to open them; pull the top up to fasten them closed - no instructions provided.
