I have no idea what it really is. Fish these days has gotten so dear that I really dont like it that much to spend that much. The cheap $5 a pound asian import fish is good for making broth. It's hard to find fish scraps for broth. Fresh west coast salmon and petrale sole and black cod cost a lot more, as much as $30 a pound.
