Hai 2 possibilita`: se hai la finestra di Nautilus focalizzata puoi
cliccare la voce "Preferenze" nel menu contestuale che appare quando tu
clicchi sull'icona File che compare sul pannello superiore di Gnome3,
oppure utilizzi dconf-editor per settarti a piacere le voci allo schema

org.gnome.nautilus.preferences

Non so esattamente per nautilus, ma in generale tieni presente che
spesso il dconf-editor offre maggiori possibilita` di configurazione di
quanto a volte non offra l'interfaccia grafica dell'applicazione stessa.
