Only when sending as SMS; when sending as an iMessage, there is no
limit.  Also, if you try to send an SMS that's more than 160
characters, iMessage automatically breaks it into two (or more) SMS
messages.

If sent through the carrier's service, it's sent as an MMS message.

That is strictly dependent upon the host.
