The reset might've been done to protect both you and them.  They aren't
liable for anything they could pull off your mass storage device (HDD or
SDD) and you don't have to be worried about what they might see or use.

Warranties don't cover data protection.  That's up to you before you
return the unit.  They're only warranteeing their product, not yours
(i.e., your config, your settings, your data).  A warranty repair pretty
much guarantees a reset to the factory-time image for that model.

That's a widget.  For me on my smartphone (Samsung Galaxy Core Prime,
Tracfone locked, Android 4.4.1), I would press and hold on a blank spot
on the home screen.  The home screen shrinks to show "Remove" above it
and "Wallpapers" and "Widgets" underneath.  Tap on Widgets.  Scroll
through the list and tap on "Google App".  You get a choice of a 4x4 or
4x1 version.  The 4x1 is the default or install-time version.  Tap and
drag the 4x1 Google App to where you want it on your home screen.
